This has been an awesome experience. Reaching the 20 mile marker was a hard wall but crossing the finish line was my greatest achievement. “Will doing it again”.

Pumpin Patch

One of our yearly tradition is to visit the Pumpkin Patch and we take the same picture every year to see the difference as our children grow up to become beautiful people.

IV Generation: Santiago Family

We are on the fourth generation of the Santiago Family, Our children as growing up so fast and I can see my mom in so many faces.

Whitefish Ragu w/ Gluten Free Pasta

Ingredients

2 cups Gluten Free pasta of your choice
1 tbsp Olive oil, divided
3 cloves Garlic, minced
1 Medium white onion, diced
1 Medium carrot, peeled and diced
2 stalks Celery, diced
1 lb Whitefish fillet, skinless, cut into 2-inch chunks (such as sole, halibut, tilapia or haddock)
1 cup Canned low-sodium cannellini beans, drained and rinsed
1 1/2 cups Low-sodium chicken or vegetable stock
1 28-oz Can no-salt-added diced tomatoes (about 3 cups)
2 Bay leaves
3 tbsp Flat-leaf parsley, chopped2 tbsp fresh lemon juice
1/4 tsp Each red chile flakes, sea salt and fresh ground black pepper
Preparation

1. Bring a large pot of water to a boil over high heat and cook pasta according to package directions. Drain pasta, toss with 1 tsp oil and set aside.

2. While pasta is cooking, heat remaining oil in a large saucepot over medium-high heat. Add garlic, onion, carrot and celery and cook for 3 to 4 minutes, or until vegetables are tender.

3. Add fish and beans to pan with sauteed vegetables, stir gently and cook for 1 to 2 minutes. Add stock, tomatoes and bay leaves to fish mixture, increase heat to high and bring to a boil. Reduce heat and simmer, stirring occasionally for 6 to 8 minutes, or until fish is fully cooked and ragu has reduced slightly. Remove bay leaves and season with parsley, lemon juice, chile flakes, salt and black pepper.

4. Divide pasta equally among 4 bowls and top with ragu. Serve immediately

Touting it as "Montel Williams' favorite belly fat-blasting supplement," Tuesday's episode of The Dr. Oz Show will discuss SafSlim.

What is SafSlim? It is high-linoleic safflower oil, flavored and emulsified into a creamy consistency. You use it twice a day before a meal. You either slurp it by the tablespoon or stir it into yogurt or blend it in a smoothie.
SafSlim comes in berry and tangerine flavors and is sweetened with xylitol. Each tablespoon is 60 calories.

Studies were done at Ohio State University on 50 overweight, diabetic post-menopausal women. The women who supplemented their diet with high-linoleic safflower oil lost up to 9 percent of their belly fat in 16 weeks without changing their diet or workouts. They also had an average of a 20 percent increase in a hormone that helps with insulin sensitivity and metabolism.

Chicago Marathon 2011

I ran the Chicago Marathon last year for the first time. A group of friends from our church do this every year. The Team is call Run 121, They run and raise funds for World Vision Children. I have to say the experience was a painful one. Running 26 miles is not easy and the training was difficult.  By the 20th miles i was promising my kids i would not do it again. As my daughter Moni would say" sure that’s what you say now. But next year we will be here again cheering you.


I cannot say i did great timing, or that I came in looking, like all the athlete. My only goal was to finish and it seem to take for forever. There were moments where, I wanted to sit down on the side walk and say "ok, I did my best".

I believe what you start, you must finish. I set my goal to complete the marathon, to Finish.  Even if I was the last one to cross the finish line.  The experience of crossing the finish line was very emotional, I didn’t know if I should cry, laugh or lay down. :)

God has blessed me with some awesome kids, they played a major role in this; cheering for us, giving us encouragement, they joined me at one point to run alongside me. God help each and every one of us all the way and kept us safe.

Well, my friend Dave send out emails to the running team and said have you decided to run a race for Team World Vision yet? Have you built up enough courage to go for it???


Yes, I am nuts and we're doing this again! My Family will be running the Rock N Roll Chicago Half Marathon August 14 with me. And, In October my husband and I will run the Chicago Marathon for the second time.

I have started a new trend in our family. Moni, Cris and Efrain and I ran the Santa Hustle last year (Dec 4, 2010). It was cold!

In January Cris, Efrain and I ran the New Year's Dash in 22 degrees weather. Its given our family yet another great opportunity to have fun and create some lasting memories.

We will be starting our official training April 2, 2011, join me in my journey of running by reading my journal.
